This is the summer version of Yamane Brewery's "Yama" (mountain) series, named after the seasonal word in haiku "Yama Shitataru" the sweat of the mountain. Every year, just after its release, one can feel an astringent taste, but this year it is less astringent and has a lively taste. This is Hiokizakura's summer sake, which aims to be fresh and non-fruity, while maintaining full fermentation.
As water has been added to reduce the alcohol content, it is a very affectionate and comforting sake. It has a dry, crisp taste with umami and freshness that goes well with summer cooking!
