In the 1980s, Kazuyoshi and his father revived an old and forgotten variety of rice called "kamenoo" from Yamagata Prefecture. Koikawa Brewery is a brewery in the making. The year 2016 is an important date for this brewery: For the first time since the war, it is drawing a line under the past and the dark history of sake with added alcohol. This is remarkable, considering the courage and effort it takes to do so. This year they will brew only Junmai.
