En le laissant vieillir vous vous apercevrez qu&rsquo;un sak\u00e9 a plusieurs pics dans sa vie. Selon la temp\u00e9rature de conservation il \u00e9voluera plus ou moins vite. si vous voulez qu&rsquo;il \u00e9volue tr\u00e8s lentement conservez le \u00e0 temp\u00e9rature n\u00e9gative jusqu&rsquo;\u00e0 -10\u00b0C. il faut \u00e9viter les temp\u00e9rature sup\u00e9rieures \u00e0 20\u00b0C et surtout la lumi\u00e8re du jour. Je vous invite aussi \u00e0 laisser vieillir une bouteille que vous avez ouverte et dont vous avez consomm\u00e9 un tiers ou une moiti\u00e9 en ayant bien sur revisser le bouchon. il m&rsquo;est arriv\u00e9 de gouter des sak\u00e9s qui avait \u00e9t\u00e9s ouverts depuis presque 2ans, c&rsquo;est surprenant, surtout dans la capacit\u00e9 \u00e0 l&rsquo;accord.
